Arayes
A delicious, easy to make lebanese dish.

Ingredients

For the meat

  • 1 pound (about 0.5kg) ground lamb

  • ½ onion

  • ¼ cup parsley

  • ¼ cup cilantro

  • 5 cloves garlic

  • 1 teaspoon baharat

  • 1 teaspoon smoked paprika

  • ½ teaspoon cumin

  • ¼ teaspoon cinnamon

  • 1 teaspoon chili powder

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon olive oil

  • Pitas

For the sauce

  • ½ cup greek yogurt

  • 2 tablespoon parsley

  • 2 tablespoon cilantro

  • 2 tablespoon lemon juice

  • ¼ cup tahini

  • Salt and pepper to taste

  • 2 cloves garlic

  • 1 tbsp olive oil

Mise en place

  1. Grate and drain the onion

  2. Chop the parsley

  3. Chop the cilantro

  4. Grate the garlic cloves

You can use a clean kitchen towel to squeeze the excess water out of the onion.

Directions

  1. Bring the onion, grated garlic, parsley, cilantro, spices, and olive oil into a bowl.

  2. Mix the ingredients together before combining the mixture with the ground lamb.

  3. Cut the pita in half and carefully stuff it with lamb and drizzle generously with olive oil.

  4. Heat a nonstick frying pan over medium heat.

  5. Sear arayes meat side down for 1-2 minutes until it gets a nice crust.

  6. Place in an oven set at 350 °F / 180 °C until cooked through (10-15 minutes).

Assembling

  1. Make sauce by combining all remaining ingredients.
