A delicious, easy to make lebanese dish.
Ingredients
For the meat

1 pound (about 0.5kg) ground lamb

½ onion

¼ cup parsley

¼ cup cilantro
-
5 cloves garlic
-
1 teaspoon baharat
-
1 teaspoon smoked paprika

½ teaspoon cumin
-
¼ teaspoon cinnamon

1 teaspoon chili powder
-
1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

Pitas
For the sauce

½ cup greek yogurt
-
2 tablespoon parsley
-
2 tablespoon cilantro
-
2 tablespoon lemon juice
-
¼ cup tahini
-
Salt and pepper to taste

2 cloves garlic

1 tbsp olive oil
Mise en place

Grate and drain the onion
-
Chop the parsley
-
Chop the cilantro
-
Grate the garlic cloves
You can use a clean kitchen towel to squeeze the excess water out of the onion.
Directions

Bring the onion, grated garlic, parsley, cilantro, spices, and olive oil into a bowl.

Mix the ingredients together before combining the mixture with the ground lamb.

Cut the pita in half and carefully stuff it with lamb and drizzle generously with olive oil.

Heat a nonstick frying pan over medium heat.

Sear arayes meat side down for 1-2 minutes until it gets a nice crust.

Place in an oven set at 350 °F / 180 °C until cooked through (10-15 minutes).
Assembling
- Make sauce by combining all remaining ingredients.
