A rich french onion sauce along with hot melted cheese makes this plate a wonderful dinner.
Ingredients
For the chicken
- 2 large boneless, skinless chicken breasts
- ½ tablespoon garlic powder
- Salt and pepper
For the sauce
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 yellow onions
- 1 tablespoon low sodium soy sauce
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 3 cloves garlic, minced
- 2 tablespoons flour
- 1 cup chicken broth
- 1 beef bouillon
- 2 cups mozzarella cheese, provolone or gruyere are great too
Directions

Cut the chicken into 2 thinner slices.

Pat the chicken dry with a paper towel and season it with salt, pepper, and garlic powder.

Into a nonstick pan, heat the oil and butter over medium-high heat.

Sear the chicken for about 3 minutes on each side until a golden crust has developed.

Set the chicken aside.

Melt the butter, toss the onions into the pan and cook until the onion is translucent.

Add the garlic, soy sauce, rosemary and thyme.

Once the garlic is golden add the chicken broth and beef bouillon. Increase the heat to medium-high and bring the sauce to a boil. Let it thicken for 4 minutes.
Assembling
- Add the chicken breasts to the sauce and let it cook for 2 minutes before topping the chicken breasts with the mozzarella cheese.
