Heart of palm risotto
A creamy, delightful Brazilian dish with a rich flavour.

Ingredients

  • 2 cups rice
  • 250g sour cream
  • ½ minced onion
  • 3 tablespoon butter
  • 1 cup hearts palm
  • 1 tablespoon parsley thinly chopped
  • 4 cups chicken broth
  • 4 tablespoon parmesan cheese
  • ½ cup white wine
  • 1 cup shredded mozzarella

Directions

  1. In a large pan, melt the butter and sauté the onion until it gets slightly translucent.
  2. Add the rice, and mix it with the onions, adding the white wine afterwards.
  3. Add 2 cups of chicken broth and cook for 5 minutes.
  4. Add the remaining chicken broth and steer it well. Let it evaporate thoroughly.
  5. Add the hearts of palm, sour cream, parmesan, and mozzarella off the heat.
  6. Stir until the cheese is melted, then add the parsley.
