Roasted green beans
Crunchy roasted green beans are a fantastic side for meats in general. It takes little to no effort, ideal for busy weekdays.

Ingredients

  • 450g green beans
  • 2 tablespoon olive oil
  • 1 lemon
  • 2 garlic cloves
  • Salt & Pepper

Mise en place

  1. Remove the stem ends and any tough strings along the length of the beans.

  2. Cut the lemon in half.

  3. Zest the lemon and cut it in half. Squeeze one half of the lemon, slice the other half and set aside.

  4. mince the garlic.

Directions

  1. Preheat the oven to 400 °F / 200 °C

  2. In a large bowl, toss together beans, olive oil, garlic, lemon juice, and salt to taste.

  3. Spread evenly on a baking sheet along with the lemon slices.

  4. Bake for 20 to 25 minutes, or until browned in some places but still crisp.

Lemon zest adds a wonderful fragrance and a light, faintly sweet taste of lemon. Plus, it fills the house with a fantastic smell of good, homemade food.
